Reimagine the classic croissant through festive Filipino flavors, combining the precision of laminated pastry with familiar tastes inspired by local favorites.
This hands-on pastry workshop introduces participants to the creative process behind Filipino-inspired croissant variations, drawing from flavors such as ensaymada, puto bumbong, leche flan, sisig, kare- kare, champorado, and dilis. The session highlights laminated dough handling, filling and topping preparation, flavor balance, texture contrast, finishing, and presentation.
By the end of the workshop, participants will gain confidence in working with croissant-based applications while developing a deeper appreciation for how traditional Filipino flavors can be transformed into modern, inventive pastry creations.
